From my research on biblical cosmology, I learned that Bullinger was a card carrying flat-earther. He genuinely believed that the Bible taught that the earth is flat.

Great question !
But the real question is "whose orthodoxy"?
The orthodoxy of the catholics directly opposes the orthodoxy of the baptists.
It is the orthodoxy of the Lord we should be following.
